Most nights in our home are a little hectic. Kids are coming and going with various activities while we are trying to help everyone get their homework done. It can be a blur between 4:30 p.m. and 9:00 p.m. So for most nights, dinner has to be fast while still appealing to everyone. Thankfully we don’t have too many picky eaters at our house. Enter a great lemon shrimp recipe.
For years my family has enjoyed this yummy recipe. It is so easy and so yummy. Gotta love those nights when you can whip dinner together in less than 10 minutes yet still feel like you are eating a nice meal. We like to pair the shrimp with an easy caesar salad. By easy I mean cut up some lettuce, open up a jar of caesar dressing, and sprinkle with fresh parmesan cheese. If we happen to have some croutons they will get sprinkled on top.
Ingredients
- 1/4 cup yogurt-based spread (such as Brummel & Brown)
- 2 tablespoons lemon juice
- 1 teaspoon low-sodium Worcestershire sauce
- 1/2 teaspoon paprika
- 1 1/2 pounds peeled and deveined large shrimp
- 1 teaspoon Old Bay seasoning
- 2 tablespoons chopped fresh parsley
Combine first 4 ingredients in a small bowl; set aside.
Place a large nonstick skillet coated with cooking spray over medium heat until hot. Add shrimp and seasoning; sauté 2 minutes. Add yogurt spread mixture, and cook 3 minutes or until shrimp are done. Spoon shrimp and liquid into individual serving bowls, and sprinkle with parsley.
BaddaBoom! Dinner on the table in less than 10 minutes. Gotta love that.
