In our quest to eat a little healthier and reduce our sugar intake, I am going to share a family favorite that is easy to make and enjoyed by all. This combination of cabbage and apple provides a refreshing cole slaw perfect for the summer months.

Ingredients
- 5 cups shredded cabbage
- 2 Granny Smith apples, cut into small cubes
- 1 cup small-diced sweet onion
- 1/4 cup red wine vinegar
- 3/4 cup mayonnaise or vegenaise
- Juice from 1 lemon
- Fresh ground pepper
- Tablespoon caraway seeds
Instructions
- In large bowl, mix cabbage, apples, and onion. In small bowl, whisk together vinegar, mayonnaise, lemon juice, pepper, and seeds. Pour over cabbage and mix well. Store in refrigerator.
