It is summer time in Minnesota! The time of year that we (OK mostly me) anxiously awaits all year long. The winters are long and cold so summers are a perfect time to get outside and enjoy our beautiful community. For us…that means going outside everyday to walk, bike, run, or play. I have mentioned before but we live in the most amazing little neighborhood. Kids bound from almost every home to play and gather with friends. This means we spend a lot of time outside with friends. Spending a lot of time outside in the summer equals a large amount of frozen treats consumed. From popsicles and fudge bars, the kids love frozen goodies while playing outside during the warm summer months.

Ingredients
- 1 bag chocolate chips (your choice)
- 3 bananas
- 1tbsp coconut oil
Instructions
- Slice your bananas into half inch pieces.
- Carefully place banana slices on a cookie sheet.
- Freeze for at least 2 hours.
- Melt chocolate chips and coconut oil until smooth.
- Gently dip frozen bananas into melted chocolate.
- Place on cookie sheet and return to freezer.
- Once chocolate is frozen, you can eat...or place frozen chocolate bananas into a sealed container.
- Store in freezer.
Frozen chocolate covered bananas provide a semi healthy way to cool off during the warmer summer months.
